Greece is brilliant for this kind of travel. Twelve island groups, hundreds of inhabited islands, ferries running all summer, and a real culture of just... figuring it out as you go. But "figuring it out" gets harder when you're trying to book accommodation in Folegandros at 11 PM from the deck of a slow ferry with no data.

Crete: excellent coverage, especially along the north coast. The Samaria Gorge is not going to have bars. That's fine. It's a gorge.
Rhodes, Corfu, Kos: popular enough that infrastructure is solid. Tourist areas are covered well.
The honest summary: for anything involving a harbor, a restaurant, a hotel, or a ferry terminal, you'll have data. For remote hiking and the deep interior of smaller islands, plan to be offline and download what you need beforehand.
Two weeks of island hopping, moderate use. Maps, WhatsApp, booking apps, occasional Instagram upload. You're looking at somewhere between 8 and 15 GB depending on how much you video call home.
Most travelers doing a 10-14 day Greek island trip land comfortably in the 10 GB range. If you're going longer or streaming on ferries (ferries have Wi-Fi, but it's usually painful), go 15 GB or ask us what makes sense for your specific route.

Samsung Galaxy S20 and later: mostly yes, depending on region. Pixel 3a and later: yes. Budget Android phones: check your specific model, eSIM support varies.
One gotcha: if you bought your phone unlocked or through a carrier that locked the eSIM slot (some US carriers did this until recently), you may need to contact them first. Takes five minutes. Worth checking before you're standing in Athens trying to figure it out.

Do both. Google Maps and Maps.me both let you download entire regions for offline use. Download the Cyclades region, Crete, wherever you're going. Do it on your hotel Wi-Fi the night before each leg. Then when you're on a small ferry between Ios and Sikinos with patchy signal, you're not guessing where the port is.
Data plus offline maps is the actual combination that makes island hopping smooth.
